Low Sodium Recipe: Fajita Marinade

Since I have been on a low sodium diet I have been on the lookout for healthier options of my favorite foods.  Some are nearly impossible (movie popcorn just isn't movie popcorn without the salt and butter) and some have been doable.

Case in point, I found this amazing recipe for a fajita marinade in my 500 Low Sodium Recipes cookbook (it's by Dick Logue ... you should check it out if you think a low sodium lifestyle might be right for you).  This is probably one of the best marinades I've ever had, and I thought it would be the perfect first low sodium recipe to share with you.  I hope you enjoy it as much as I do!

Fajita Marinade

1/4 cup (60 ml) olive oil
1/4 cup (60 ml) red wine vinegar
2 teaspoons (10 ml) Worcestershire sauce
2 teaspoons (10 ml) lemon juice
2 teaspoons (10 ml) lime juice
1/2 teaspoon black pepper
1 teaspoon cilantro
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon dried oregano

Mix ingredients together and use to marinate beef or chicken for at least 6 hours or overnight.  (I found overnight is best.)  Grill and slice meat, then serve with sauteed onions and peppers and some low sodium tortillas.

Yields 8 servings.
