Hungry Hump Day: Barbeque Pizza

I realize this is going to actually post on Thursday, but since we ate it on Wednesday I thought you would be okay with it. Good.

This recipe comes by way of 101 Things To Do With Ground Beef, by Stephanie Ashcraft and Janet Eyring, and I must say it is delightfully simple and quite tasty.

Barbeque Pizza

1 pound ground beef (though I think this could easily be lessened ... next time we're trying 3/4 lb.)
3/4 cup barbeque sauce (we used KC Masterpiece original)
1 small red onion, chopped
1 pre-made pizza crust (we used a Boboli Whole Wheat crust)
1 1/2 cups grated Colby Jack cheese

Preheat oven to 400 degrees. (We bumped it up to 450 degrees because that is what the pizza crust called for.)

In a frying pan, brown ground beef until no longer pink. Drain if necessary. Stir barbeque sauce and onion into beef. Simmer over low heat for 5 minutes.

Place crust on pizza pan. Spoon beef mixture over the top. Sprinkle cheese over meat mixture. Bake for 10 minutes, or until done. Makes 4 servings.

Like I said, you could probably use less beef and have it be more pizza-like; ours was heaping with the ground beef mixture. And you could easily change up the flavor by using different types of barbeque sauce. It was very good and soooooo easy!
