Mmm ... Monday: Company Chicken

This recipe comes from the cookbook my in-law's Gourmet group put together, and the recipe itself was added by my mother-in-law, Paula Jacques. It is wonderfully simple and uber-tasty.

Company Chicken

2 cups bread crumbs (we use Italian bread crumbs)
3/4 cup Parmesan cheese
1 clove garlic (minced)
2 teaspoons salt
1/8 teaspoon pepper

Mix in bowl. Melt 1 stick margarine. Roll chicken pieces (we use whole chicken breasts, but this could easily be used for chicken tenders) in margarine then in Parmesan mixture. Place in baking dish. Don't overlap. Dot with margarine. Bake 350 degrees Farenheit for 1 hour. Do not turn.
