This recipe comes from a cookbook my sister got me for Christmas, 101 Things to Do With Ground Beef by Stephanie Ashcraft and Janet Eyring, and it is truly delightful! (It might not look like much in the picture above - yes, I realize I need to work on my food photography skills - but it really is delicious!) Oh, and it was so quick and easy to make!
Baked Italian Delight
1 lb. ground beef
1 jar (26 oz.) chunky spaghetti sauce*
1 cup cottage cheese
1/4 cup grated Parmesan cheese
1 egg, slightly beaten
2 tubes (8-count each) crescent rolls
1 cup grated mozzarella cheese
Preheat oven to 375 degrees Fahrenheit.
In a large frying pan, brown ground beef until no longer pink. Drain if necessary. Stir spaghetti sauce into cooked beef. Simmer 5 minutes over low heat.
In a bowl, combine cottage cheese, Parmesan cheese, and egg.
Lay one tube crescent roll dough along bottom of a 9 x 13-inch pan**. Press to form a crust, sealing cracks. Layer half the meat mixture, cottage cheese mixture, then remaining meat mixture. Sprinkle mozzarella cheese over top. Lay the remaining dough over the top, covering as much as possible. Bake 25 minutes, or until golden brown.
Makes 6 to 8 servings.***
* I used Ragu Chunky Tomato, Garlic, and Onion Sauce. It was awesome!
** It doesn't say to spray the pan first, but I might give that a try next time. It was a little tough to get out, but it most certainly was not baked to the bottom of the pan.
*** My husband, son, and I ate a little over half of this pan. Now, I am pregnant and we did only have cranberry sauce as a side dish (I know, I know, Mom!), but I don't think you could stretch this to 8 people. Just giving fair warning.
I hope you all enjoy this as much as we did! And I highly recommend the whole line of 101 Things to Do With ... books; they offer a lot of great new ideas that are often very simply made.

My colleague Donna Kelly has written a lot of those 101 Cookbooks and I agree...they are fantastic!!! That recipe looks really yummy!
